  1. I love that every one of these can be made vegetarian/vegan with a little substitution, although the clam chowder would diverge the most and require the most makeover. Oyster mushrooms are a common vegan substitute for clams. I would use shiitakes in place of the pork chops in the kimchi jjigae. The easiest and most obvious is substituting vegetable stock/bouillon for the meat versions in the various recipes.
