  1. I did the Keto diet for 6 months and lost 57 lbs during 2019. Then because of health reasons I switched my diet to a heart friendly low saturated fat and high fiber diet which meant it was time for me to work back in some complex carbs (I was diagnosed with sinus tachycardia and high cholesterol). Anyway, I made several Keto pancake recipes and never found one that was actually delicious. As for the Wonder noodles….YUCK! They are NOT a good noodle substitute for me. I felt like I was eating slimy worms and they smelled like a biology lab dissection experiment (and yes, I rinsed them before cooking). lol Well, now my hubby is going low carb at the recommendation of his doctor. I should pick up this cook book and give some recipes a try. He is sooo not enjoying eating anymore. He's a very picky eater and there's only so many times you can eat eggs or a burger patty or air crisped chicken before you're sick of it. I need new ideas. Thanks for the review and idea of the kinds of things that are in the this cookbook.

  2. my partner is strictly paleo and i found the paleorunningmomma blog has the BEST pancake recipe. they’re sweetened with applesauce instead of a sugar alternative. i’ve also used pumpkin instead of applesauce and it’s sooooo good. also, pure maple syrup is naturally sugar free which is why it’s paleo. i actually use it as a substitute for vanilla in a lot of recipes.
