  1. I do cucumber, red onion and either red or yellow bell pepper. Sometimes I add tomatoes, or fruit like nectarine, mango or pineapple. I eat it on everything! As a 'dip' with tortilla chips, as a wrap or a sandwich, on baked potatoes, etc. It's delicious.
