I am so excited to share with you 5 delicious Instant Pot soups! Perfect for the cooler weather ahead. These soups are healthy and hearty and great for the entire family. I have everything from a couple 20 minutes soups and even 2 that only take 5 minutes. Who does love a 5 minute Instant Pot recipe? I love when you can get a healthy dinner on the table fast. My kids love all of these and I know they will be on repeat in my house all fall and winter long. Not only do you get yummy fall soups, but today I am collabing with Lemonade Mom and she is bring you 5 Instant Pot Pumpkin recipes. So go check out her channel and tell her I sent you. Remember that I am using a different pressure cooker than an Instant Pot, but these recipes will work with all pressure cookers. These also make great instant pot recipes for beginners. Vegetable Chicken & Rice
2-3lbs chicken breast
28oz can crushed tomatoes
1 1/2 C (4) Carrots (peeled, diced)
1 C (2) celery stalks (diced)
3 cloves minced garlic
1/2 C brown rice
6 C chicken broth
2 T olive oil
1 t basil
1 t oregano
1/2 t garlic powder
1/2 t onion powder
2 t salt
3 C (2) Zucchini (diced)
1 bag frozen corn
1 red pepper (diced)

Top with sour cream (or Greek yogurt), and avocado

Taco Soup
2 lbs ground beef (or use 1 lb and 1 can of rinse and drained beans)
1/4 C taco seasoning
2 cans diced tomatoes
2 cans tomato sauce
1 bag frozen corn
1 C water
1 med onion, diced

Top with sour cream (Greek yogurt), cheese, avocado, tortilla chips

Potato Soup
3 lbs potatoes
1 large carrot (peeled, diced)
1 med onion (1/2 large onion), diced
5 cloves garlic, minced
4 C chicken broth
1 bag frozen corn
8oz cream cheese
1 T olive oil
Salt and pepper to taste

Top with green onion, cheese, and bacon

Creamy Tomato Basil Soup
3 28oz crushed tomatoes
1 T garlic, minced
2 C chicken broth
1 1/2 C onion (chopped)
1 1/2 C carrots (peeled, chopped)
1 C heavy cream
1 T dried basil
2 t salt
1 t pepper

Use immersion blender or regular blender to create the creamy texture you desire.

Top with fresh basil, pesto, and Parmesan cheese

Chicken Tortilla Soup
3 lbs bone chicken breast (fresh or frozen)
2 bell peppers diced (any color)
1 med onion (diced)
6 cloves of garlic (minced)
5 tsp. ground cumin
2 tsp. dried oregano
3-4 tsp. chili powder
2 tsp. kosher salt
1/2 tsp. black pepper

6 cups chicken broth
juice of 1 lime

Top with Greek yogurt, sour cream, cilantro, avocado, lime wedges
