I also love soups with leftovers of chicken (sometimes add sliced Italian sausage or ham) , dry beans (already cooked)/lentils; cut up carrots/celery/potatoes/cabbage (these medley can be placed in the microwave for fast cooking); spiced with turmeric, pepper flakes; salt/pepper, partial can of mild diced tomatoes with green chilies, lemon splash, few bay leaves; chicken broth and water; cut up kale and cilantro. Can be garnished with fresh cilantro, grated cheese; and or cut up avocado, and tortillas chips. It's yummy and last for many days (depending how much you make)

Add Lentil soups to your budget friendly meals. I like to cook mine with celery/carrots and curry/Tumeric/cumin/ginger/garlic. I use bone broth to make it a super healthy meal. Serve it with white basmati rice. Its very filling.
