In today’s 🍱 Vegan Bento:
🌺Vegan Kimchi Hot Dog
🌺Mini Smoked tofu, summer vegetables skewer
🌺Seasonal Watermelon, Blueberries Basil salad

🌺Vegan Kimchi Hot Dog
3 Hot dog brioche buns
3 Vegan sausage
1 Caramelized Onion, sliced
50g Pickled cucumber, sliced and chopped
Mustard
Vegan butter
Kimchi Mayonnaise
130g Kimchi
60g Vegan Mayo
Salt & Pepper
Instruction
Step 1: Slice onion and pickled cucumber. Roughly cut kimchi.
Step 2: Mix kimchi, vegan mayonnaise, salt & pepper to taste.
Step 3: Heat the pan on medium high heat, caramelize the onion. Roast plant based sausages on the same pan.
Step 4: Add a dollop of vegan butter on the pan, grill brioches on medium heat, approx. 25-30 seconds on each side.
Step 5: Ensemble the hot dogs, optionally butter the brioches first, and add kimchi mayonnaise, caramelized onion at the base, then sausage, pickled cucumber slices, topped with chopped pickled cucumber and mustard.
🌺 Mini Smoked tofu, summer vegetables skewer
200 g Smoked tofu
Half Zucchini
12 Cherry tomatoes
Half Yellow Bell pepper
Skewer sticks
Quick smokey bbq marinade
2 cloves Garlic
4 tbsp Barbecue sauce
2 tbsp Light soy sauce
1 tsp Smoked paprika powder
Black pepper
Instruction
Step 1: Cut smoked tofu, bell peppers, zucchini (half moon shape) to approx. 1 cm thick. Finely mince garlic.
Step 2: Thread all ingredients onto the mini skewer sticks.
Step 3: Mix together all smoky bbq marinade ingredients. Brush it onto the skewers.
Step 4: Heat the pan/ grill on medium high heat. Grill the mini skewers for approx. 10 minutes, turn them occasionally.
Tip: You can also grill the skewers in the oven at 200 degree celsius for 20-25 mins, remember to soak the wooden skewer sticks in the water for 30 mins before grilling to avoid them from burning.
🌺 Seasonal Watermelon, Blueberries Basil salad
280g Watermelon, cubed
60g berries
Handful Basil
Half of the Lemon juice
Salt & pepper
Instruction
Step 1: Cut watermelon into cubes. Slice basil leaves.
Step 2: Mix all ingredients together, and gently toss it.
Step 3: Topped with basil leaves or optionally toasted nuts as a final touch
