Lemon Chicken and Zucchini Skillet
1 tablespoon olive oil
1 ½ pounds boneless chicken breast or thighs
Salt, pepper, and garlic powder
3 small zucchini (about 1 pound total)
2 tablespoons fresh lemon juice
1 tablespoon soy sauce
1 teaspoon dried basil
¼ teaspoon dried oregano
½ cup shredded Parmesan cheese

1. Dice chicken breast and zucchini into bite size pieces.
2. Make the marinade by whisking together 1 tbsp oil, 2 tbsp lemon juice, 1 tbsp soy sauce, 1 tsp dried basil, 1 tsp dried oregano. Combine the marinade with the chicken and zucchini and let it rest for at least 1 hour.
3. Place in air fryer basket. Salt, pepper, and garlic powder to taste.
4. Cook at 380F/193C for 10 minutes. Chicken will be done once it reaches internal temp of 165F.
5. Sprinkle parmesan cheese on top and place the basket back inside the warm air fryer to let to cheese melt, but do not turn the air fryer on.
6. Remove and enjoy!

Asian Salmon:

Air Fryer Radishes
12 ounces (340 grams) radishes, trimmed (approximately 2 bunches of radishes)
¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon dried parsley
salt and pepper, to taste
cooking oil spray of choice

1. Trim, wash, and cut the radishes into bite size pieces.
2. Mix together the garlic powder, onion powder, parsley, salt and pepper.
3. Place radishes in air fryer basket. Spray with oil, sprinkle on the seasoning mixture. And stir together.
4. Cook for 15-20 minutes at 400F/200C, or until radishes are done to your liking.

  1. Yum, yum and yum! I happen to like zucchini, but the rest of my family doesn't care for it, so I plan to try the chicken recipe with a different vegetable. The other two recipes look awesome, and I just have to try them. I'm curious to know if cooking the radishes takes away the sharp aftertaste that normally creeps up on you after you start to eat them. (And the looks on your daughters' faces kept me smiling all through the video.)

  2. I bought an air fryer last week and after searching videos decided to buy your cookbook. I have made quite a few dishes which I don't think I would have tried if I didn't have the book. Although my fryer is not the same brand the instructions for time and temperature seem to be the same. Going to be interesting in the next few months.
