FLAX EGG MIXTURE:
– 4 tbsp flax meal
– 4 tbsp water
mixed together and stored in an air-tight container in the fridge

DOUBLE CHOCOLATE MUFFINS (V):
– 2/3 cup soy milk
– 1/2 tbsp apple cider vinegar
– 1 cup plain flour
– 1/2 cup cocoa powder
– 1 cup brown sugar
– 1.5 tbsp baking powder
– pinch of himalayan pink salt
– 2 heaped tsp flax egg mixture
– 1/4 cup vegan butter, melted
– 1 tsp vanilla
– 3/4 cup vegan chocolate chips
Baked at 190 degrees celcius for 20-22 minutes

RASPBERRY & WHITE CHOC MUFFINS (V/GF):
– 1 1/4 cups gluten free self-raising flour
– 1/2 cup raw sugar
– 1 tsp baking soda
– 1/2 cup almond milk
– splash of vanilla
– 1/4 cup vegan butter, melted
– 2 heaped tsp flax egg mixture
– 1/2 cup frozen raspberries
– 100g vegan white chocolate
Baked at 190 degrees celcius for 24-26 minutes

NECTARINE & YOGHURT MUFFINS (V/GF/RSF):
– 1 1/4 cups gluten free self-raising flour
– 1 cup coconut sugar
– 1 tsp baking soda
– 1/2 cup almond milk
– 1/2 cup coconut yoghurt (use COYO if you would like RSF)
– 2 heaped tsp flax egg mixture
– splash of vanilla
– 2 nectaries, chopped
Baked at 190 degrees celcius for 24-26 minutes
