Tofu Salad Recipe:
Recipe for Three Beans salad
Prep time: 5-8 mins
Cooking time: none
Serves: 2

Ingredients
For dressing:
Extra Virgin Olive oil-1 Tbsp
Honey – 1Tbsp
Lemon juice- 2 Tbsp
Fresh coriander-2 tbsp
Fresh mint -1tbsp
Salt and Black pepper (To taste or 1 tsp)

For salad:
Boiled Chickpea -1 bowl
Boiled Kidney beans – 1bowl
Canned baked beans fried in tomato sauce. ( I am using Heinz baked beans fried in tomato sauce)- 1 bowl
Cucumber 1, chopped in dice
Cherry Tomato 8-10, halved
Bell pepper – Red & Yellow, Half bowl ( Half red & half yellow)
Beetroot – ¼ diced
Onion- ¼ , thin slices
Sweet pepper- 1-2 chopped

Method:
In a bowl, add all salad ingredients and mix well, keep them aside for further use.
In a salad bowl add all salad ingredients and add prepared salad dressing, mix well and serve.

Recipe for French Beans & Broccoli salad
Prep time: 5-8 mins
Cooking time: none
Serves: 2

Ingredients
For dressing:

Soy Sauce – 1Tsp
Sriracha – 1Tbsp
Fresh mint leaves – 1Tbsp
Garlic – 1Tsp, minced
Salt and Black pepper (To taste or 1 tsp)

For salad:
Blanched French beans – 1Bowl
Cherry Tomato 8-10, halved
Cucumber – ½ , sliced
Beetroot – ¼ bowl
Blanched broccoli -1/2 bowl
Roasted peanuts crushed coarsely – Garnish

Method:
In a bowl, add all salad ingredients and mix well, keep them aside for further use.
In a salad bowl add all salad ingredients and add prepared salad dressing, mix well and serve.

Prep time: 5-8 mins
Cooking time: none
Serves: 2

Ingredients

For dressing:
Olive oil-1 Tbsp
Apple cider vinegar- 1Tbsp
Lemon juice- 2 Tbsp
Garlic – 1Tsp, minced
Salt and Black pepper (To taste or 1 tsp)
Paprika – 1Tsp
Fresh coriander
Fresh mint

For salad:
Lettuce – Chopped
Cherry Tomato 8-10, halved
Cucumber 1, chopped in dice
Bell pepper – Red & Yellow, Half bowl ( Half red & half yellow)
Onion ½ thin slices
Baby spinach leaves- 10- 12
Canned baked beans fried in tomato sauce.( I am using Heinz baked beans fried in tomato sauce) – 1 bowl
Tofu- 200gms
Sesame seeds- Garnish
Goat’s cheese- Garnish

Method:

In a bowl mix all ingredients for dressing, mix well and keep aside for later use.
In a salad bowl mix all the ingredients of salad as mentioned above, add the prepared salad dressing and mix well.
Serve salad and garnish with Handful of goat’s cheese and sesame seeds.
