↠ RAINBOW PAD THAI
◇ 1 yellow squash (spiraled)
◇ 2 zucchinis (spiraled)
◇ 1 cucumber
◇ 1/2-1 cup green onion (diced)
◇ 1 handful cilantro (diced)
◇ 1 red bell pepper
◇ 1 orange bell pepper
◇ 3 rainbow carrots (peeled)
◇ 1/2-1 cup raw peanuts
◇ Add salt & pepper to taste (optional)
↠ PAD THAI SAUCE
◇ 2 tbsp raw cashew butter
◇ 2 tbsp raw tahini
◇ 2 tbsp coconut aminos
◇ 2 cloves garlic
◇ 1 tsp ginger (grated)
◇ 1/2-3/4 medium lime (juiced)
◇ 1/4 cup water
♡ Spiralizer I Used to Make the Noodles:
♡ Vegetable Peeler I Used:
↠ SPINACH BASIL PESTO PASTA
TO PREPARE THE NOODLES:
◇ 1 pack of kelp noodles (soaked for at least 20 minutes with the juice of lemon + pink Himalayan salt until noodles soften)
♡ Kelp Noodles I Used:
↠ PESTO SAUCE
◇ 2 handfuls of baby spinach
◇ 1 cup pine nuts
◇ 1/2 cup basil
◇ 1/2 avocado
◇ 1/8-1/4 cup water (optional or depending on desired consistency)
◇ 1 tsp salt
◇ 1/8 tsp pepper
♡ Food Processor I Used:
◇ 1 tbsp of hemp seeds
◇ 1/2 avocado
↠ SPRING ROLLS
◇ 1 cucumber
◇ 1 red bell pepper
◇ 1 avocado
◇ 1 cup shredded carrots
◇ 1/2 red onion
◇ 1 roma tomato
↠ SPRING ROLLS SAUCE
◇ 1/4 cup agave nectar
◇ 1/3 cup champagne vinegar
◇ 1/3 cup nama shoyu
◇ 1 clove garlic
◇ 2 tsp white miso
♡ Spring Rolls I Used:
** Soak the spring rolls in warm water for 5-10 secs to soften. Load ingredients quickly in the rolls to avoid wrap sticking to cutting board.

First, I have to get that peeler, thank you for the link! That would make my life so much easier! Second, I never thought to warm noodles in the dehydrator- that is such a great tip!! Last, I have found an even easier, lazier way of making spring rolls – I make a huge salad, add dressing, mix it up and THEN stuff the rice paper rolls: this way I dont have to dip them and risk losing the veg. plus everything is evenly coated😋

If you add 1 tablespoon of baking soda with the lemon the kelp noodles will be more pliable. I am exploring the raw side of life..im not 100 percent there but im trying different things and 1 of the things I recently tried was pesto with the kelp noodles the recipe I got from another YouTuber I follow.
I loved the look of your recipes but I am a lazy raw vegan newbie. I will just go and eat like a whole watermelon for lunch and then dinner a large bowl of grapes. Mono meal is easy for me. Do you have your lovely recipes in a ebook
Everything look so delicious 😋 I will definitely be trying the pesto with kelp noodles soon. I make my pesto sauce almost exactly the same way but I always use zoodles, so I am looking forward to trying the kelp noodles!
That spinach basil pesto looks so good. All of the recipes do 😍😍😍. Do kelp noodles have a weird or fishy taste? Also, is the texture similar to pasta noodles?
