These make-ahead, meal prep summer salad recipes are super easy and healthy! You guys know I’m a big fan of meal prep and while sometimes I do individual ingredient meal prep (check out my whole series of videos), other times I prefer to do a “make-ahead recipe” that’s one big batch and enjoy it throughout the week. Especially during the summer months when I want to spend less time in the kitchen!

These meal prep ideas for summer salads are light and fresh, and there’s a flavor combination for everyone to enjoy – from Cucumber Shrimp Salad to Mango Curry Chicken Salad and Mediterranean Chickpea Salad. Hope you enjoy!

  2. I made your Classic Shrimp Salad today. It is so delicious. I can’t wait to try the shrimp/cucumber salad. I really like your YouTube videos and website. So many recipes I have in my rotation now are from you. Some of my favorites are the Berry Baked Oatmeal, Creamy Tuscan Chicken, Greek Sheet Pan Chicken Dinner, Ultimate Ham Salad and Dijon Baked Salmon. I also have your cookbook.   3. I love make ahead meal prep meals!! Sadly, I’m allergic to mango, so won’t try that one (although I really want too 😢), but I’ll definitely be trying the other too!! Thanks for your great recipes!! ☺️

  5. I'm so glad you are doing meal prep videos! (Hats off to you and Amy because I know these are not easy) I always go back and watch your ingredient/meal prep videos, but especially now as my kids are just adults (still at home) and I encourage them to make more of their own meals. I really need simplicity to prep a few things for myself for the week … otherwise it's 23 Pizza Rolls in the air fryer … just sayin! Is there any chance you can do a video on your favorite make ahead dressings and/or marinades? Or maybe you (or Amy) can go back through some of the video's you've done and edit one together?

  6. 3 really nice salad variations! My favorite would be the chicken salad. The shrimp salad and the chickpea salad are also very nice. Unfortunately, the shrimp variant is out of the question for me. I live far away from the nearest ocean and the amount of shrimp would just cost me too much. For fresh produce, I estimate $30-40. I'd rather take a steak for that.👍👍
