CHOCOLATE MUG CAKE RECIPE
3 tablespoons almond flour, extra fine
2 tablespoons cacao powder
2 tablespoons monk fruit*
1 egg
1 tablespoon coconut oil
1/2 teaspoon vanilla extract
1/4 teaspoon baking powder
pinch kosher salt
1 tablespoon chocolate chips, optional
INSTRUCTIONS
Grease an 8-ounce mug with coconut oil, butter or cooking spray and set aside.
Combine all ingredients in a small spouted cup and mix until you have a nice, rich cake batter.
Transfer batter into prepared mug.
Sprinkle chocolate chips over the top and cook in the microwave for one minute or until set through and springy on top. All microwaves will vary a bit.
Enjoy as is, or top with whipped cream and fresh berries.
NOTES
*Monk fruit is an all natural, calorie free sweetener. It helps keep this recipe low in carbs and sugar. If you prefer to use something else, you can replace it 1:1 with any other type of granulated sugar.

1/4 cup almond flour, extra fine
2 tablespoons monk fruit*
1 teaspoon coconut oil
1/8 teaspoon vanilla seeds or 1/2 teaspoon vanilla extract
1 egg
1/4 teaspoon baking powder
pinch kosher salt
INSTRUCTIONS
Grease an 8 ounce mug with coconut oil or cooking spray.
If using fresh vanilla beans, scrape them out of the pod and set aside.
Combine all ingredients in a spouted glass cup and stir until you have a nice, rich cake batter.
Transfer the batter to the mug and pop in the microwave for one minute.
Top with your favorite topping and enjoy!

I just made the chocolate one and it was a tiny bit dry. I will reduce the microwave time just a pinch next time. Also, I might add a fruit purée on the top because for me it needed a tiny bit more sweetness but not much. I’m definitely making this again!
I made the vanilla one and it isn't bad but it did taste a bit eggy to me. Perhaps next time I will use only the egg white instead of the whole egg.

I am allergic to artificial sweeteners (or more precisely, the additives the manufacturers put in them, I used regular white sugar (1-1/2Tablespoons) but may cut back a little more. Cooked them in a heavy cereal bowl since I didn't have a large mug and they were both perfect. Now I can't wait for strawberry season to top the vanilla cake. Yummy!!!

Love these mug cake recipes! There perfect when you just want a single serving dessert. I tried the chocolate one and its delicious. I didn't have coconut oil so I just substituted with butter and it worked for me! Definitely give it a go!
