2 Healthy Sugar-free Pancake Recipes


Here are two different options for making delicious, yet healthy pancakes, with no sugar added.

Almond Flour Option
1 1/4 cups Almond Flour
1/2 Teaspoon Baking Soda
Stevia to taste
1/3 cup Almond Milk
2 Eggs
1/4 cup Coconut Oil
1 teaspoon Vanilla Extract

Cassava Flour Option
1 1/4 cups Cassava Flour
1/2 Teaspoon Baking Soda
Stevia to taste
1 cup Almond Milk
2 Eggs
1/4 cup Coconut Oil
1 teaspoon Vanilla Extract

My favorite Mixed Flour Option:
1 cup Cassava Flour
1 cup Almond Flour
1 Teaspoon Baking Soda
Stevia to taste
1/2 cup Almond Milk
3 Eggs
1/3 cup Coconut Oil
2 teaspoon Vanilla Extract
Add water as needed to make a thinner batter

Optional toppings: sugar-free syrup or sugar-free whipped cream with blueberries

Mix the dry ingredients, then whisk in liquid ingredients. Grease pan and ladle in the batter. Cook for 2-3 minutes on each side.

I have a recipe for almond flour pancakes which I am just not sure about, due to texture. I am going to try the cassava flour, even though I realize it will have more carbs.   3. For he healthier option, Almond Flour, cold you perhaps soft it to get it smoothier??
    I truly like Maple 🍁 syrup, but for the healthier option, would you also recommend Agave? Thanks Lady Lead for the all time favorite! I believe Lead hit a new, healthier version of the Debbie Cake.🤣🤣🤣🤣🤣 Love yall! ❤️

  4. My husband was recently diagnosed with diabetes, and i have been looking for healthier, low carb alternatives – that don't sacrifice flavor for both of us. I have to find another flour as he doesn't like nuts, and we need low carbs, so I'm unsure about the kasava, but thank you for the sugar free syrup idea.

  5. Hey we were doing almond flour pancakes and they are good but I found 'carbquick complete biscuit and baking mix' it says it is made with 'carbalose flour' this stuff says it makes a 2 carb biscuit and 2 carb waffle and 3 carb for 2 pancakes!
    It shows recipes for biscuits, waffles, pancakes, bunt cakes, pizza crust and breading for frying. I can't wait till try it out!
