SUPER SIMPLE 15g Carb Peanut Butter & Oat Cookies

Ingredients
1.5 cups rolled oats (use gluten free, if desired)
1/2 cup peanut butter
2 ripe bananas
1/4 tsp salt (you don’t have to add this, but it brings out the PB flavour)
1/4 tsp vanilla extract
Optional add ins: chocolate chips, raisins, chopped nuts/seeds, vanilla extract, cinnamon, coconut flakes, etc!

Instructions
1. Preheat Oven to 350F / 175C
2. Mash Bananas, Peanut Butter, Vanilla Extract and Salt together in a large bowl.
3. Add in Rolled Oats and mix well.
4. Form into 12 balls and flatten on a baking sheet.
5. Bake at 350 F /175 C for 12-15 mins.
6. Dose Insulin (if required) and ENJOY!

Makes 12 delicious, 15g carb cookies! 🙂
