I’ve wanted to show you a “what I eat in a day” for a while, but I did’t know how beneficial it would be considering it’s usually just coffee for breakfast, something leftover from dinner the night before for lunch, a chip or two as a snack and then Monica and I make a nice dinner if we are not going out…. which most of the time we go out.
So I figured the best way to show you what I enjoy eating when I’m not making all the wild sauce stache fake meats is show you 3 easy vegan dinners I eat regularly. These are easy, super simple, mostly 15 minute dinners, that are not based on fake meat, just quick, super delicious vegan meals.

I adore Violife Feta!! It’s a cross between a Chèvre Goat Cheese and a Feta. The only problem is that it’s highly addictive. ☺️ Thank you for your whole food recipes!!
I just watched Ethan Chlebowski's video on risotto style pasta, and I think it would work really well for your last recipe, instead of draining the water. Also agreed, the Violife feta is really good! Don't think it tastes like feta, but it has a nice strong cheesy flavour. I find that a lot of cheese alternatives actually taste really good, but just need to amplify the taste it already has.
Nice! I bet walnuts would work for the tacos, too. Yum.
The pasta dish isn't really my style, but I like how it looks! Not a big fan of tomatoes. It's comes down to the seeds for me… overall I appreciate the quick dinner ideas! Definitely would LOVE to see more of these. Especially since it's too hot to cook anything too time intensive. (My house is 85 degrees by 1pm during the hotter days of summer)
The Violife feta is a bit disappointing, but it's a lovely alternative to what use to be my favorite cheese.
