Lentil Walnut Vegan Meatballs!
🎉These whole foods plant based meat balls are crispy on the outside & soft on the inside! Loaded with Italian flavour, protein & fibre! 💪

✨INGREDIENTS✨
1 small onion
1 carrot
1 stall celery
5 cloves garlic
250g mushrooms
1 cup walnuts
3 cups lentils
2 tbsp ground flax
1/2 cup whole wheat bread crumbs (or oat flour for gluten free)
1/2 cup finely chopped parsley
3 tbsp tomato paste
1 tsp Rosemary
1.5 tsp thyme
1.5 tsp oregano
Salt & pepper to taste
😋 Finely dice your onion, carrot & celery & sauté in some olive oil for 5 minutes.
🍄Add in the garlic & mushrooms & cook for a further 2-3 minutes.
🥜 Pulse your walnuts in a blender or food processor until they break into tiny pieces then add in the lentils & pulse again. Scrape down the sides as needed.
🥄 Mix together the lentil walnut mix, sautéed veg, and the rest of the ingredients in a large bowl with your hands.
🙌Divide into at least 24 balls and place onto a greased baking tray. The smaller the better as they get crispier the smaller they are! If the balls are too big they may fall apart!
🔥 Bake @375f for 45 minutes until the meatballs are golden and crispy!
