This comforting soup is made with roasted cauliflower, onions and coconut milk for you to enjoy your winters. CAULIFLOWER SOUP Ingredients 1 medium cauliflower, separated into florets 4 tsps oil 2 medium onions, roughly chopped salt to taste ½ tsp Tata Sampann Turmeric Powder 2 cups vegetable stock 1½ cups coconut milk ½ tsp black pepper powder 2 tsps lemon juice ½ tspemon lemon zest Method 1. Heat 2 tsps oil in a nonstick pan. Add cauliflower florets and roast on medium heat for 4-5 minutes. Transfer in a bowl and set aside. 2. Heat remaining oil in the same pan. Add the onions and sauté till translucent. 3. Add salt, Tata Sampann Turmeric powder and mix well. Cook for a minute more. 4. Reserve some cauliflower florets for garnish and add the remaining ones to the pan and mix well. 5. Add vegetable stock and mix well. Cover and cook on medium heat for 5-7 minutes. 6. Transfer in a bowl and blend to fine puree with the help of a hand blender. 7. Transfer in the same pan, add coconut milk and mix well. 8. Add black pepper powder, lemon juice, lemon zest and mix well. 9. Transfer into a serving bowl and serve hot garnished with remaining cauliflower florets and basil sprig.
